avocado toast: two ways

Today, we decided to show you two interpretations of an all time favorite of both of ours: avocado toast. There is something so satisfying about topping crusty bread with creamy avocado — it really is a perfect vegetarian snack or light meal. Read on to see how we each decided to make ours!

garlic-roasted asparagus

Roasting is probably my favorite way to prepare vegetables. With just a handful of ingredients and some time in the oven, a sad, raw veggie becomes the star of my plate. Roasting tomatoes gets them all crinkly and juicy. Green beans develop a sweet charred flavor. Butternut squash softens and melts in your mouth. And asparagus? It becomes crispy yet tender—the perfect weeknight side dish.

apple fennel salad

So a couple of weekends ago, my mom and I went to this really cool thing in Cincinnati (and it's not often that I get to type the words "really cool thing in Cincinnati"). It was the inaugural Cincinnati Food and Wine Festival, and it was pretty much a food bloggers dream. I got books signed by Joy from Joy the Baker and Jessica from How Sweet Eats — both are as lovely as they seem on their blogs — and I got to watch a few cooking demonstrations and competitions. One of my favorite events of the day was a demonstration by chef Nathan Lyon, where he made this apple and fennel salad from his cookbook, Great Food Starts Fresh. As soon as my mom and I tried it, we both knew we had to buy the book so we could make this at home.

homemade almond milk

Before I experimented with homemade almond milk, I'll admit it — making it myself seemed unnecessarily tedious. I was under the misconception that making nut milks at home was difficult, expensive, and simply not worth it. But boy, was I wrong. It is beyond worth it. And it's easy. And the result is heavenly. So don't be like me!! And make this now (please).

roasted potato rounds

These potatoes are it for me- the end all, be all of roasted potatoes. These potatoes and I, we are walking hand in hand off into the sunset together. They are that good. Extremely crispy on the outside, exceptionally creamy on the inside: everything you could ever wish for in a potato. Because, you know, we all have wishes for our potatoes, right?
