cauliflower "rice" with lime-roasted chickpeas

This recipe is a wonderful reminder of why cooking is so fun. Taking an ordinary ingredient and flipping it on its head is kind of awesome — I mean, who would have thought a giant head of cauliflower could become the grain-like base to a tasty vegetarian dish? This is the first recipe I've used this technique with, and I can't wait to keep trying out new ways to work with it.

maddie's mac and cheese

This is it, people. The most requested recipe in my arsenal, the number one go-to dish for parties, holidays, you name it: it's my perfect mac and cheese. Starring three cheeses to create a creamy, flavorful sauce, this mac and cheese is everything you could hope for in a pasta dish. The crispy crunchy panko bread topping is the perfect compliment to the richness that lays underneath. And get this: on top of all that, is it also one of the easiest things ever to make!

Assembling a salad is a pretty wonderful creative outlet. You can add whatever you want to your spinach/arugula/kale base, toss it all together, and eat your favorite things together in one bowl. This recipe is a perfect reflection of that—hence why I've eaten it for 3 days straight.

caramelized carrots with parsley and lemon zest

roasted squash and kale pasta with two cheeses

This pasta is the epitome of fall: it stars my favorite winter green, kale, the ever popular butternut squash, and it's cooked in a skillet, for goodness sakes! The duo of cheeses brings this dish to the next level: sharp parmesan melts to create a rich sauce, and creamy hunks of mozzarella add an extra level of flavor and texture to each bite.

coffee ice cubes

Happy National Coffee Day! Here in Birmingham its still too hot for lattes, so we're celebrating this holiday with a treat for your iced coffee. There's nothing quite as satisfying on these hot and humid days, and I desperately need to make my own batch of cold brew so I quit stopping for coffee on my way to work. Plus, I've got my ice cubes all ready to go, and these ice cubes + cold brew = the perfect iced coffee.
