Now this is a perfect salad. No ifs, ands or buts about it- this salad is my new favorite. Sweet crispy pears, crunchy fresh radishes, toasty walnuts, tossed alongside soft bibb lettuce and drizzled with a dressing that will definitely become a staple in our household- this salad is simply fabulous.
Creamy dressings are difficult to get right. You don't want to ruin a healthy salad by dousing it in something overly rich, but sometimes it's nice to have that extra element of texture that makes a salad a little more satisfying. This dressing is the answer to that- the greek yogurt adds just the right amount of flavor and consistency without adding a million calories.
I'm usually more of a spinach or kale kinda girl, but this bibb lettuce is fantastic. The bibb at my grocery store comes with the roots still attached, and nicely packaged in its own little case because it is so delicate. It's soft texture and mild flavor is a nice change from the hearty kale we usually eat. Give it a try! You won't regret it.
Bibb Salad with Pears and Dijon Yogurt Dressing
Serves 4
Ingredients
- 1/4 cup olive oil
- 1 small shallot, minced
- 2 tablespoons plain greek yogurt
- 2 tablespoons dijon mustard
- 2 tablespoons cider vinegar
- salt and pepper
- 1 head Bibb lettuce, leaves separated and torn
- 4 radishes, trimmed and sliced thin
- 1 pear, sliced thin
- 1/2 cup walnuts, toasted and chopped
- 3 scallions, sliced thin
Whisk the oil, shallot, yogurt, mustard, vinegar, 1/2 teaspoon salt and 1/2 teaspoon pepper in a small bowl. Combine lettuce, radishes, pear, walnuts, and scallions in a large bowl. Toss salad with about half of the dressing. Season with salt and pepper. Serve, passing remaining dressing separately for those who might want a little more.
